At first I didn't know what to do with it other than make the muffin recipe on the back of the package :) But over time I tried different things and now I use it all the time!<br />One important thing is, it makes anything so much thicker!!!! I would add about 2 -3 Tablespoons to your muffins and don't worry about substituting anything for it. They will be fine and you will never know it is there. I put it in my pancake, waffle batters, all my muffins and anything I bread (chicken parm, fish, whatever.)
