Fajita Chopped Salad

I found this recipe when I flipping though the new Family Fun Magazinze. Of course it wasn't exactly this, I had to make my adjustments to it to make it better and lighter! 

Ingredients:
Steak (skirt, flat iron)
For the Steak:
1 Tablespoon olive oil
1/4 cup apple cider vinegar
1/2 t chili powder
1/2 t cumin
Salt and Pepper

Salad:
4-5 cups Romaine/Spinach
1 red bell pepper, chopped
1 jicima (cubed and marinated in 1 teaspoon of honey and the juice from 1/2 a lime)
1 cup fresh corn shucked from cob (cooked and cooled)
1 cup black beans (drained and rinsed)
1 small cucumber, chopped
6-8 grape tomatoes halved
2 spring onion sliced

Dressing:
1/2 cup light sour cream
1/4 cup light ranch
1/2 fresh salsa

Directions:
Combine olive oil, vinegar,chili powder, cumin, salt and pepper. pour over meat and marinate in fridge for at least an hour. Then peel and dice jicima, pour honey into a bowl and whisk the juice of 1/2 of a lime into the honey until well combined, pour over jicima and add some fresh chopped cilantro. Put in fridge to marinate.

Prepare salad in a bowl, mix all the salad ingredients together except corn, black beans and jicima. Prepare dressing by mixing all ingredients and let sit until you are ready to serve.

Grill the steak, then slice on the diagonal. To serve, pour dressing over salad mixture and toss to coat the lettuce. Over the top sprinkle, corn, black beans, jicima(drained) and sliced steak. OMG it is so yummy!!!! I served this with cheesy nachos and cheese and black bean quesadillas for the kids!

Weight Watcher friends: This salad was so good and healthy and only has 6 points per serving. I broke the whole recipe into 5 large servings.  So Good!!!
