Baked Acorn Squash

This is something my mom has always made it is so simple yet so delicious. I love squash, all of them but this is especially yummy! Some people like to add Cinnamon, and sugar to their squash but I love the natural sweetness of this squash and when you add a little butter and salt it has a great balance of sweet and savory. I had it in my vegetable bowl on my table for about 4 days before I made it and my kids kept asking about that 'green pumpkin.'  They couldn't wait for me to cut into to it and cook it!


Ingredients:
1 Acorn Squash
2 tsp butter
Kosher salt and Pepper

Directions:
Preheat oven to 375 degrees. Cut in half, scoop out seeds and discard. Place each half in a baking dish cut side up and add 1/3 cup of water to the bottom of the pan. Place in oven for 20 minutes. Remove carefully and flip the halves cut sides down. Bake for 15 minutes more. Remove from oven, put a teaspoon of butter in each half sprinkle with salt and pepper. Eat the flesh of the squash right out of the peel!



Weight Watcher Friends: This has no points on it's own so depending on what kind of butter you use, you will have to determine the points. I love real butter so I just use it and count the points but I know some people like spray butter and that way it would have 0 points.
