Mozzarella Stuffed Turkey Burgers with a Balsamic Glaze and Bruschetta Topping

These babies take OMG to a whole new level!!! SO yummy and so healthy, could it be, well yes it can!My husband thought these were the best turkey burger he ever ate, he was just mad I didn't buy buns for everyone. In my defense, they seemed so hearty, they need a bun. My son who is 5 ate two, he thought the cheese dripping out of the side was the best part. I served them with rosted red poatoes and my my green bean salad.

This recipe has three parts, the bruschetta, the glaze and the burgers but don't be scared, take it step by step and you will be so glad you made these!

Ingredients:
For the Bruschetta...
3/4 cup of diced tomatoes (I used about 10 grape and 2 Roma)
1/3 cup purple onion, diced
2 small garlic cloves, minced
1 T olive oil
1 T Balsamic vinegar
2 T fresh basil or flat leaf parsley
Salt and Pepper
For the Burgers...
1 lb ground turkey breast (99% fat free)
1/4 cup fresh grated Parmesan cheese
1 small onion, diced
4 T Mozzarella cheese, Shredded
salt and pepper to taste
Onion Powder (just a dusting on top once the burgers are formed)
Garlic Powder (just a dusting on top once the burgers are formed)
Paprika (just a dusting on top once the burgers are formed)

For the Glaze...
1 cup Balsamic Vinegar

Directions:
For the Bruschetta, combine all ingredients stir together and refrigerate for at least 30 minutes.

For the Glaze, simply pour the vinegar into a small sauce pan over medium heat, once it starts to boil turn to low. Stir occasionally until the vinegar thickens to a thin syrup, takes around 20-25 minutes.  It will sweeten and be fabulous!


For the Burgers, put your ground turkey in a bowl, top with onion, parm, salt and pepper. Using your hands, mix together well and make 4 small, thin patties top each patty with 1 T of mozzarella cheese then place another small, thin turkey patty on top and close the sides of the top and bottom burger together by pressing with your fingers to close the burger around the cheese. Dust the tops of each burger with onion power, garlic powder and some paprika. Heat a non-stick skillet of medium high heat use either a non-stick spray to coat the pan or a teaspoon of olive oil, cook on each side until the burgers are cooked through about 5 minutes per side.
To serve, drizzle with the glaze and top with the bruschetta, then eat slowly, because if you are like me, you will be sad when this one is gone!
