Texas Caviar

A few years ago my friend, Kathryn brought this dip to our annual girl's Christmas Party. We all chowed down on it, it is delicious! I got the recipe from her and have made it several times, and take it to parties all the time and every time, without fail, someone asks me for the recipe.There are several variations to this famous appetizer, and even several variations on the name of it but I promise this is the best version out there! Try it, I promise you will be hooked and if you make it and bring it somewhere, you will be the star of the party! I will warn you, there is a lot of chopping, I suggest, cleaning your veggies, grabbing the trash can or your compost bowl and sitting down while you chop away.

Ingredients:
1 can black beans, rinsed and drained
1 can black eyed peas, drained
1 can shoe peg corn, drained
1 can chopped black olives, drained
4 oz. crumbled feta cheese
4 roma tomatoes, chopped
 4 - 5 green onions, chopped
1 green pepper, chopped
1 jalapeno, seeded and diced
1 lime, juice & zest
1 tbsp. minced garlic
1 handful fresh cilantro, chopped
 black pepper to taste
1 bottle Newman's Own Olive Oil and Vinegar dressing (pour 90% of the oil out, I pour the oil into a container and save it for cooking, it is has great flavor)

Directions:
Mix together and refrigerate for at least an hour. Serve with Frito's or tortilla chips and you will be the star!

Weight Watcher Friends: This makes about 12-14, 1/2 cup servings. Each serving is 2 points. Full of flavor!!!
